R.S. Tex Mex Tuna Casserole

2 cups drained, flaked water-packed Tuna
2 cups low-fat Cottage Cheese
3/4 cup lite Sour Cream
1/4 cup diced Red Onion
1/4 cup canned, diced Green Chilies
2 Tblsp. Salsa
3 cups cooked, drained Noodles
12 Saltine (no salt) Crackers, crushed
12 dry roasted, unsalted Cashew Nuts, chopped
Note: I use unsalted raw and obliterate them with my kitchen mallet

Preheat oven to 350 degrees
In a large bowl, combine all the ingredients except the crackers and nuts.
Turn mix into a 2 qt. casserole dish coated with cooking spray. 
Combine the crackers and nuts and sprinkle on top of the casserole.
Bake uncovered 30 minutes.
8 Servings
Note: I divide the casserole evenly into 8 meal plan trays.
